Breakfast Bagel

Serves 1

Ingredients

1 tbsp low-fat cream cheese

1 bagel, sliced in half and toasted slightly

50g smoked salmon or trout, sliced

1/2 avocado, sliced

½ lemon, cut into wedges

1 tsp olive oil

1 egg

pinch of cayenne pepper

 

Method

  1. Spread the cream cheese on both halves of the bagel. Add the salmon to the bottom half and then top with the avocado.
  2. Squeeze lemon juice over and season to taste.
  3. Heat olive oil in a non-stick pan. Fry the egg to the desired doneness and place it on top of the bottom half of the bagel. Close the bagel with the top half and enjoy!
